Meaning 'Nectar of the Gods', nectarines are almost genetically identical to peaches, but with a smooth red, orange or yellow skin. Nectarines can be eaten firm and crunchy or allowed to ripen to become soft and juicy. White nectarines are sweet when they are still firm and crunchy, while yellow nectarines have an extra layer of tardiness beside its sweetness, which make yellow nectarines more complex and pleasing to fun seeking palettes.
